This certified organic family-owned farm is female-owned and operated in Milton, N.Y., about 75 miles north of NYC. These woman are passionate environmentalists growing top quality organic produce. A member of the beet family, swiss chard is so popular in Italy that it finds it's way into ravioli filling, vegetable-filled tortas (pies), and pasta sauces. You can use every inch of Swiss chard including the stems. If they are very thick, cut them out and parboil. Then dip in a beer batter and fry in olive oil for appetizers, sprinkling with sea salt before seving. The sweet stem meat cloaked in a golden crunch is the perfect cocktail nibble.
