Here is a relatively new variety of winter squash developed by chef Dan Barber of restaurant Blue Hill at Stone Barns in collaboration with Michael Mazourek, a plant breeder from Cornell.
It is a miniature butternut squash cross with ten times the sweetness of a regular butternut.
Cut in half and roasted, one Honeynut is the perfect serving for two.
