Joseph Petronglo in South Jersey grows savoy spinach that has loose rather than crinkly curls and a softer texture than most west coast savoys. The leaves are large and chewy with a strong mineral flavor. Wash carefully as Savoy spinach can be gritty. Most people prefer savoy spinach cooked down into a silky pool but its' toothsome texture and iron-rich flavor also make it a popular salad bowl green.
Petronglo's spinach is here in our warehouse the same day it's picked. They harvest in the morning and we stock it in our warehouse that same night. You can always count on longer shelf life with greens that aren't thousands of miles old.
