These are naturally-neon colored sweet mini peppers that are perfect for halving and stuff. Mix breacrumb with grated cheese, parsley, cooked sausage, oregano, sautéd onions, and cooked mushrooms, or your favorite vegetables you have on hand. Bake until softened. Or, halve, seed, and sear in olive oil with thinly sliced onions, salt, and pepper before simmering, covered, in a drip of good balsamic vinegar, like Tondo, for a couple minutes for a sweet and sour appetizer.
