Nestled inside the pomegrante's leathery husk are glittering, jewel-like kernels called arils that pop with intense, bittersweet, ruby-colored juice. Pomegranate pearls are used in green salads, smoothies, grain and seafood dishes, tagines and, most recently, to add sparkle to cocktails. Excavating them from their honeycombed white pith is challenging but fun. Sprinkle over cereal or oatmeal; stir into yogurt. Watch your skin and clothing though - they leave near indelible stains.
