Red kaki persimmons are a variety of fuyu persimmon that originated in Japan and are now cultivated in Spain, among other countires. They have firm flesh that tastes sweet even when hard and can be peeled and cut with a knife. Use in desserts, salads, ice creams, for after meals or for a snack. Like all persimmons, kakis are very rich in vitamin A and C, and potassium.
