Using the great milling traditions of Naples as well as the latest technology and techniques, they produce exceptional flour blends. Their Semola Rimacinata, or double-milled semonlina flour, has a fine texture that is very hard to find in semolina flours. This flour is ideal for extruded pastas and breads, and has a 12% protein content.
